Aromas guide my process before anything else. I work with infusions, distillations and unexpected pairings, tasting in layers until a dish holds the tension I want. Coming late to the family kitchen, after my father died, meant learning in public, and that shaped how I lead a brigade today. Conversations about flavour construction, about running restaurants in several countries, and about building a team that can hold three stars quietly are the ones I value.
