Restaurant kitchens raised me long before a camera did; I was working the line as a teenager after my father's business struggled. The oversized dishes and the smile came from wanting every guest to feel welcome, and those videos carried Hatay cuisine to millions. I now run restaurants in several countries, cook Turkish and Arab dishes daily, and still greet tables myself whenever I am in the building.
