About Elena Arzak
I grew up between the dining room and the laboratory of a restaurant my family has run since 1897, and I still spend part of every week testing with our research team. Working alongside my father means constant argument, in the best sense, about what a Basque dish should be. I enjoy talking through technique, family kitchens, and how a restaurant carries four generations without turning into a museum.
