Ubud drew me in and I stayed, learning Balinese cooking from the people who had always done it and slowly building places where food and writing could sit side by side - a kitchen to teach in, and a festival that brings writers and readers to the same tables. Cooking here is about ingredients picked that morning and spice pastes made by hand. That is what I teach, and why.
