About Marc Almert
Service is the discipline I was trained in, so I think about wine from the table backwards: what the guest ordered, what the room feels like, what will still taste right at the end of a long dinner. At the Baur au Lac that means a deep cellar and a very wide range of guests. Competition preparation sharpened my blind tasting, but the daily work is listening. I enjoy teaching both halves.
