A plate of food in a place I did not know was what set the direction - I started writing about what I ate, then filming it, and never really stopped. Years of that has made me quick at finding the stall that matters on a street of thirty, and careful about how I talk to the people cooking. I work in Bangkok and travel for food, and I am happy to talk through how any of it is made.
