About Tim Raue
Sharp, sour, hot — that is the frame I cook inside, with Japanese, Thai and Chinese ideas rebuilt in a Berlin kitchen and no butter or cream anywhere near them. I grew up in Kreuzberg on the wrong side of most things, and a kitchen was the first place where discipline made sense to me. I speak plainly about that history, about ambition, and about what running a restaurant genuinely demands of you.
