About Vikram Vij
Hospitality comes first with me — I still walk the dining room most nights and pour wine for guests myself. Since 1994 I have cooked Indian food in Vancouver on my own terms, using British Columbia's lamb, seafood and produce rather than importing nostalgia. Business and food are tangled together in my work, and I enjoy both conversations equally: spice technique, restaurant economics, or how immigrants build something in a new country.
