About this experience

The evening begins at dusk near the Chinatown gate, with a short briefing on how the lanes work: which stalls fire up at which hour, and why the queue moves the way it does. The group then walks six stops in order, from a charcoal noodle wok to a crab omelette pan and a stewed pork counter, with each dish ordered in Thai and broken down while it is still hot. Between stops there is time to look at the produce carts and dried goods shops that supply the stalls. The walk finishes upstairs in an old shophouse, where the two or three dishes worth returning for are ordered again and eaten sitting down, over tea, with a printed stall map and directions for anyone going back alone.
